Rising to a new challenge, Stick Chick baked a pie from scratch and using her flair for drama decorated it for a fundraising auction. It fetched a pretty penny for a good cause, which made it freakin’ awesome. On good authority it tasted delicious too.
Key Lime Pie ~a la 50Figment
For the filling:
4 egg yolks, beaten
2 cans sweetened, condensed milk
1/4 cup fresh squeezed lemon juice
1/4 cup fresh squeezed (or bottled) lime juice
For the crust:
1-1/4 cup graham cracker crumbs
3 Tablespoons sugar
1/3 cup butter
For the topping:
1 cup heavy whipping cream
1 Tablespoon sugar
1 small lime
Combine graham cracker crumbs and 3T sugar in a medium bowl. Stir in melted butter. Form into 9 inch pie plate and chill for one hour before filling.
Preheat oven to 375F degrees. Combine egg yolks, condensed milk, and juices. Pour into unbaked pie shell. Bake for 20 minutes. Allow to cool.
Whip cream and add 1T sugar until stiff. Place cream in cake decorator and top pie as you like. Slice lime and place in center of pie. Garnish pie with tidbits of lime zest.
